PrepRite Blast Chillers and Blast Freezers Out-perform the Competition

Blast chillers and blast freezers from PrepRite by Everidge are used by chefs, restaurateurs, caterers, confectioners and more to reduce the temperature of cooked food for storage quickly and safely. According to the U.S. Food & Drug Administration, the highest danger of food contamination occurs when temperatures drop from 140ºF to 40ºF. HAACP principles regulate that hazardous foods cannot be within this “danger zone” for more than four hours. A commercial flash or blast freezer or chiller ensures your food reaches the right temperature range in less than two hours, keeping food safe and your operation up to code.  There is also a distinction between a blast chiller and a blast freezer. Both are used to quickly lower food to around 37ºF in 90 minutes, but blast chillers are generally limited beyond that. If you need to reach temps lower than 37 degrees, you need a blast freezer.

PrepRite blast chillers and blast freezers employ Ambient Chill. This process removes heat rapidly using high-speed continuous and even air flow – so continuous that it chills the food to its core in a very short time. It could be compared to a convention oven in which air is used for rapid heating transmission. The difference in our ambient chill versus competitors’ direct air flow, is that we are removing heat, not blowing cold air directly onto the product. This prevents crystallization on food and retains just-cooked food taste and quality.

PrepRite units are more energy efficient than most of the competition and amperage usage is typically lower. We utilize HyBlade® fans which are ultra-quiet, and incredibly energy efficient. Additionally, our units have thicker insulation than other units – a full three-inches of insulation. Our innovative door design has no handle and incorporates an LED touch screen controller.
